Fresh salsa & chips

FRESH SALSA

This recipe makes good use of veggies that grow so readily in Southern gardens. Adjust quantities & ingredients depending on what you have on hand & to suit your family's taste.

    • Combine the following ingredients in a large mixing bowl:
      • One 28 oz. can of DICED TOMATOES (juice & all)
      • About 2 cups of chopped fresh tomatoes & bell peppers
      • 1 tbsp (or more) chili powder
      • The juice of 1 lime
      • A cup or so of chopped green onions, garlic chives, or whatever else you might have on hand from the onion family
      • A small bunch of fresh cilantro, chopped fairly small
          (NOTE: You might want to ease into using cilantro if your family isn't used to eating it: the slightly soapy flavor is an acquired taste.)
      • You might like to add fresh parsley, too, if you have it growing in your garden.
      • Salt & pepper to taste
    • Pour the completed salsa into a bowl that you can cover & leave in the fridge for a few hours.
    • When it's time to eat, move the salsa into a dish that shows it off and serve with chips & nacho cheese &/or sour cream.
